Imereti isn't a concept. It's a place — a region in western Georgia where breakfast means fresh khachapuri from the tamada's oven, where khinkali are eaten standing up, and where a meal isn't complete until everyone has had enough.
When we opened our doors in Brighton Beach, we made one promise: nothing on this menu is an interpretation. The dough is mixed the way our grandmothers showed us. The spices come from Georgia. The techniques haven't changed in a hundred years.
What we've built here is a piece of that country — a kitchen that smells like garlic and toasted walnuts, a dining room where strangers become regulars, and a menu that tells the story of a cuisine the world is only just beginning to understand.
